The Ultimate Homemade Portuguese Version of Crème Brûlée

Thought I would bring you a deliciously firm favourite dessert in this country which is a Portuguese version of Crème Brûlée called here Leite Creme Queimado.  It is a dessert that can be made simply and quickly and doesn’t cost too much.

  • 1/2 litre of semi-fat milk
  • 1 heaped soupspoon Cornflour
  • 4 to 5 soupspoons sugar
  • 1 slice of lemon rind
  • 1 cinnamon stick

Serves 4

Dissolve the cornflour in a little cold milk.  Join the rest of the ingredients together with the cornflour mixture and cook over a low heat stirring all the time until it thickens.  Once thickened remove lemon rind and cinnamon stick and pour out on to a flat plate and allow to cool slightly.

Sprinkle sugar over the top of the Leite Creme and burn with an electric burning iron (the blow torch burner doesn’t do such a good job as the electric one – trust me!)

Delectable, served slightly warm with the hard sugar crust and accompanied by a glass of chilled 20 Year Old Tawny Port!

Found this page when searching to see if anyone else has an electric creme burner ( mine is Spanish) and I love it… By the way I use mine in a different way to you, drain across sugar topping allowing a quick burn in each area rather than putting down as a whole like your pic shows… You get a nice even caramel topping!
